Power Fuel NuttZo Spiced Apple Muffins

DESCRIPTION

The perfect muffins to enjoy during the fall season! They pair perfectly with some hot apple cider or tea and you can have them for breakfast, a snack, or dessert. These cupcakes will keep for 5-7 days in the fridge when covered or stored in an airtight container. Or you can freeze for 3-6 months. Recipe by: Better With Cake .


INGREDIENTS

1 c of apple puree (apple sauce)
3 eggs
1/4 c of Power Fuel NuttZo
1 T of vanilla
1/2 c of coconut flour
1 tsp of cinnamon
1/2 tsp of ginger
1/4 tsp each of nutmeg, cardamom & cloves
1 tsp of baking powder
1/2 tsp baking soda

2 c of apple puree (apple sauce)
6 eggs
1/2 c of Power Fuel NuttZo
2 T of vanilla
1 c of coconut flour
2 tsp of cinnamon
1 tsp of ginger
1/2 tsp each of nutmeg, cardamom & cloves
2 tsp of baking powder
1 tsp baking soda

3 c of apple puree (apple sauce)
9 eggs
3/4 c of Power Fuel NuttZo
3 T of vanilla
1 1/2 c of coconut flour
3 tsp of cinnamon
1 1/2 tsp of ginger
3/4 tsp each of nutmeg, cardamom & cloves
3 tsp of baking powder
1 1/2 tsp baking soda

INSTRUCTIONS

Pre-heat oven to 175’C/350/F
Line a muffin tray with paper cases (or grease well) and set aside.
Whisk together apple puree, eggs, Power Fuel NuttZo, vanilla, baking powder, baking soda, and spices until well combined.
Add coconut flour and stir until well combined.
Scoop batter into your prepared muffin tray
Bake for 15-20 minutes until the tops spring back when lightly pressed and a toothpick has just a few moist crumbs attached when inserted into the center.
Devour!
