1 ½ cup mashed sweet potatoes (I used one medium sweet potato)
½ cup gluten-free oats
¼ cup Peanut Pro NuttZo
1 tsp baking powder
½ tsp nutmeg
1 tsp cinnamon
Make mashed sweet potatoes:
Peel and chop a sweet potato, put it in a pot, pour enough water to cover completely, bring it to a boil. Once boiling, reduce to a simmer and cover until sweet potato is soft (check with a fork). Drain and mash with a potato masher. Measure out 1 ½ cups for waffles.
Whisk all ingredients together in a large mixing bowl (I used the whisk attachment on my immersion blender, but you could also use an electric mixer!).
Cook in a waffle maker according to appliance instructions.
