1 or 2 bunches of full-size carrots (about six or twelve)
2 tbsp crunchy Peanut Pro NuttZo
2 tbsp tahini
½ tsp apple cider vinegar
1 tbsp olive oil
Salt and pepper to taste
Preheat oven to 400F.
Clean carrots and remove leaves. Lay on a greased baking sheet. Spray with avocado oil and season with salt and pepper.
Bake until soft (35 minutes for smaller carrots, 45 minutes for larger).
While carrots bake, make the sauce: combine NuttZo, tahini, apple cider vinegar and olive oil in a small bowl, whisk to combine.
When carrots are done, drizzle sauce over top and enjoy.
