1/2 cup almond flour
1 scoop vanilla pea protein powder
1 scoop matcha collagen peptides
1/4 tsp baking powder
1/4 tsp baking soda
1 tbsp unsweetened applesauce
1 tbsp pure maple syrup
1 tsp vanilla extract
1/2 cup plain Greek yogurt
1/4 cup unsweetened vanilla cashew milk
1 1/2 tbsp crunchy Peanut Pro NuttZo
1 Maple & Matcha Bold BiteZ crumbled up into small pieces
Preheat oven to 350 degrees, and spray a mini muffin tin with olive oil spray.
Mix all of the dry ingredients together in a large bowl.
Combine all of the wet ingredients together in another bowl.
Add wet ingredients in with the dry, and mix until fully incorporated.
Pour the mixture into your prepared muffin tins, sprinkle the tops with the crumbled up Maple & Matcha Bold BiteZ, and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean! Yields 15 mini muffins.
