Sweet Potato Peanut Pro NuttZo Waffles

Breakfast will never be the same once you try these flourless nut butter waffles. You’ll satisfy your sweet tooth without any added sugar, sneak some veggies on your plate, and feel good about the way you’re starting your day. (Gluten-Free, Dairy-Free).

Ingredients

1 ½ cup mashed sweet potatoes (I used one medium sweet potato)

1 egg

½ cup gluten-free oats

¼ cup Peanut Pro NuttZo

1 tsp baking powder

½ tsp nutmeg

1 tsp cinnamon

Directions

Make mashed sweet potatoes:

Peel and chop a sweet potato, put it in a pot, pour enough water to cover completely, bring it to a boil. Once boiling, reduce to a simmer and cover until sweet potato is soft (check with a fork). Drain and mash with a potato masher. Measure out 1 ½ cups for waffles.

Whisk all ingredients together in a large mixing bowl (I used the whisk attachment on my immersion blender, but you could also use an electric mixer!).

Cook in a waffle maker according to appliance instructions.
