Power Fuel Soba Noodle Salad

We know we post a lot of sweet recipes, but once in a while we like to switch things up and add in a delicious savory recipe. This Power Fuel Nuttzo Soba Noodle Salad is perfect for a savory summer dinner! Thank you t Alexa for creating this beautiful looking dish! Remember to let us know how yours turned out. ENJOY!


3 ounces soba noodles

1-2 bell peppers thinly sliced

1-2 carrots thinly sliced

1 cucumber thinly sliced

1 cup purple cabbages thinly sliced

1/4 cup peanuts

1/4 cup cilantro

1 tablespoon black or white sesame seeds

1/2 cup Power Fuel Nuttzo

2 tablespoons sriracha

1/2 tablespoon minced ginger

2 tablespoons low sodium soy sauce

Juice of 1 lime

2-4 tablespoons water (Depends on the consistency you want)


Cook soba noodles according to instructions on package and set aside.

Thinly slice bell peppers, carrots, cucumber, cabbage and cilantro.

In a small bowl place Power Fuel Nuttzo, sriracha, ginger, soy sauce,water and lime juice, whisk together until smooth

Place a generous amount of soba noodles at the bottom of your bowl, add vegetables, cilantro, and pour over spicy ginger peanut sauce. Finish with a sprinkle of sesame seeds.
