Mini Bakery-Style Matcha Bold BiteZ Protein Muffins

Make a big batch of these muffins for a great meal prep recipe to have before or after your workout. Made with plenty of nutritious ingredients to keep you fueled throughout your workout, outdoor adventure, or busy day. They have a crusty and fluffy bakery-style top, while still being soft and moist in the center!


Dry Ingredients:

1/2 cup almond flour

1 scoop vanilla pea protein powder

1 scoop matcha collagen peptides

1/4 tsp baking powder

1/4 tsp baking soda

Wet Ingredients:

1 egg

1 tbsp unsweetened applesauce

1 tbsp pure maple syrup

1 tsp vanilla extract

1/2 cup plain Greek yogurt

1/4 cup unsweetened vanilla cashew milk

1 1/2 tbsp crunchy Peanut Pro NuttZo

1 Maple & Matcha Bold BiteZ crumbled up into small pieces


Preheat oven to 350 degrees, and spray a mini muffin tin with olive oil spray.

Mix all of the dry ingredients together in a large bowl.

Combine all of the wet ingredients together in another bowl.

Add wet ingredients in with the dry, and mix until fully incorporated.

Pour the mixture into your prepared muffin tins, sprinkle the tops with the crumbled up Maple & Matcha Bold BiteZ , and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean! Yields 15 mini muffins.
