Rainbow Spring Rolls + Peanut Sauce

Is there anything better than a quick lunch recipe that leaves you feeling energized and ready to carry on with your day? These rainbow spring rolls are one of those real gems! Slice some veggies, roll them up in rice paper and dip them in your favorite sauce. Make sure to whip up a these delicious spring rolls by World of Vegan.



1 – Place all ingredients into your food processor or blender and process until smooth, creamy, and well combined.

You can whisk by hand but this is much faster and I find the batter gets extra light and fluffy this way.

2 – Cook over medium/low heat in a lightly greased fry pan or skillet (I like to use coconut oil or ghee for extra flavor) for 2-3 minutes per side until the edges look dry and bubbles appear on the top.

3 – Flip and cook for 1-2 minutes longer.

4 – Repeat until all pancake mix has been used.

5 – To serve – top with NuttZo Paleo Power Fuel
