NuttZo Tahini & Sweet Potato Salad

This twist on traditional potato salad keeps your taste buds talking and asking for more! We think this recipe elevates potato salad to a whole new level, but you be the judge. Just don’t overcook your sweet potatoes or you’ll have a MASHED sweet potato salad… 🙂



Place sweet potatoes in a pot of salted water.
Boil for 15 min or until slightly undercooked.
Drain potatoes and rinse in cold water.
In another pot add apple cider vinegar, water and maple syrup. Bring to a boil.
Turn off heat and add onions. Let sit for 20 minutes.
In a large bowl, combine NuttZo Tahini Fusion, celery, onion, olive oil, mustard, cumin, paprika, salt, pepper and optional fennel seeds. Stir well. When potatoes and onions have cooled, fold them into the large bowl and toss gently.
