Well we’re in the thick of the holiday gathering time, and chances are you’ve got at least one houseguest pawing through your cabinets for leftover fruitcake by now. These delicious muffins are gluten and dairy free, nut free (depending on the nut butter you use), and are a snap to make ahead of time. So put down the Frosted Flakes and make a batch of these so even your mother-in-law will be left speechless.
Berry-nana Flax MuffinsIngredients
2 Extra Ripe Bananas
5 fresh Strawberries
1/4 cup frozen Blueberries
1/2 cup brown Ground Flax Seeds
1 Extra Large Egg
1/4 cup NuttZo Peanut Free Nut Butter (or any nut butter you have on hand)
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Ground Cinnamon
1 tablespoon Chia Seeds
1 tablespoon Hemp Seeds
2 tsp Vanilla ExtractDirections
Preheat oven to 350 degrees. Prepare muffin pan by spraying with nonstick cooking spray._x000B_ Mash bananas and strawberries in a large bowl. Add flax seed meal, chia seeds, hemp seeds and egg. Mix well. Add NuttZo or nut butter and mix everything together._x000B_ Add remaining ingredients and mix until combined._x000B_ Distribute batter amongst mini muffin tin and bake for 15-20 minutes.
