NuttZo Mediterranean Couscous Recipe |

1 1/3 cups couscous

2 cups boiling water

1/2 cup chopped eggplant

1 tablespoon olive oil

1/4 cup chopped yellow heirloom tomato

2 tablespoons finely chopped dill

1/4 cup diced red onion

1/8 teaspoon ground pepper

1/4 teaspoon salt

1/4 cup rice wine vinegar

1 1/2 tablespoons NuttZo

2 tablespoons crumbled feta cheese


Mix couscous and boiling water in a large bowl and let stand for 10 minutes. Lightly sauté eggplant with olive oil in a pan. In a small bowl, mix tomato, dill, red onion, sautéed eggplant, pepper, salt, vinegar, NuttZo, and feta cheese. Let sit for about 15 minutes to marinate. Toss into cooked couscous.
